4 large turkey fillets
2 tablespoons soy flour
Fresh pepper to taste
˝ cup Colavita Extra Virgin Olive Oil
1 medium red bell pepper, seeded and cut into strips
4-6 ounces oyster mushrooms, cleaned and torn apart
4 garlic cloves, sliced
˝ cup Colavita balsamic vinegar
˝ cup chicken stock
1 tablespoon Dijon mustard
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
In Addition:
1 tablespoon soy flour
2 tablespoons Colavita balsamic vinegar
Serves 4
Mix soy flour with pepper and salt and dust turkey fillets. Sauté turkey fillets about 5 minutes, turn over when brown. Add bell pepper strips, mushrooms, and garlic. Continue cooking another 5 minutes.
Meanwhile, mix Colavita
balsamic vinegar, chicken stock, mustard, and thyme and add to turkey fillets. Cover and continue to cook for approximately 30 minutes over medium heat. Remove turkey.
Mix 1 tablespoon of flour with 2 tablespoons of balsamic vinegar, add to skillet, stir, and cook 5 to 7 minutes. Return turkey to marry flavors.
