TURKEY (CACCIATORE) HUNTER STYLE


            4 turkey fillets, cut into 16 pieces
            4 tablespoons Colavita Extra Virgin Olive Oil, divided
            2 cloves garlic
            2 small yellow onions, chopped
            1 stalk celery, chopped
            8 fresh ripe plum tomatoes, chopped (or one 20-ounce can)
            2 bay leaves
            ½ tablespoon dried sage or 1½ tablespoons chopped fresh sage
            1 tablespoon dried rosemary or 3 tablespoons chopped fresh rosemary
            Freshly ground pepper to taste
            Salt to taste
            1½ cups chicken stock
            ¼ cup dry red wine*
            4 ounces whole button mushrooms/double if desired

Serves 4.

In a large skillet, brown the turkey fillets in 2 tablespoons of Colavita Extra Virgin Olive Oil. When all the pieces are browned, remove the turkey fillets from the skillet.

In the same skillet, sauté the garlic, onions, and celery in the remaining 2 tablespoons of Colavita Extra Virgin Olive Oil until soft; add the tomatoes, bay leaves, sage, rosemary, pepper, and salt. Return the turkey fillets to the skillet, cover, and simmer for 25 to 30 minutes. Add the stock, wine, and mushrooms. Continue to simmer, uncovered, for an additional 30 minutes, until turkey is cooked. Discard bay leaves before serving.

*Suggested Wine: Bolla Merlot
