In the same skillet, sauté the garlic, onions, and celery in the remaining 2 tablespoons of Colavita Extra Virgin Olive Oil until soft; add the tomatoes, bay leaves, sage, rosemary, pepper, and salt. Return the turkey fillets to the skillet, cover, and simmer for 25 to 30 minutes. Add the stock, wine, and mushrooms. Continue to simmer, uncovered, for an additional 30 minutes, until turkey is cooked. Discard bay leaves before serving. *Suggested Wine: Bolla Merlot |
