PASTA WITH TURKEY


            1 pound penne
            3 tablespoons unsalted butter
            8 ounces cooked turkey, ¼ inch thick, cut into strips
            1 small onion, diced
            6 plum tomatoes, diced
            1 cup heavy cream
            ½ cup fresh or frozen peas
            Freshly ground black pepper to taste
            1/8 teaspoon ground nutmeg
            ¼ cup grated Parmesan cheese

Serves 4 to 6

Cook the pasta as usual.

In a large skillet, heat the butter over medium heat. Add the turkey and onion and cook for 3 to 5 minutes, or until the onion is translucent. Stir in the tomatoes, and add the cream, peas, pepper, and nutmeg, until the mixture is slightly thickened, 3 to 5 minutes. Add the Parmesan cheese and mix thoroughly. Toss with the pasta and serve.
