pound of jumbo shrimp
¼ cup of soy sauce
2 cloves of garlic, crushed
½ cup of Colavita Extra Virgin Olive Oil
2 tablespoon of balsamic vinegar
1 tablespoon of ground ginger
Juice of
½ an orange
1 tablespoon honey
2 cups of pineapple chunks
2 large red peppers
Secret ingredient: ½ cup of dark rum
Remove shell and de-vein shrimp, leaving the tail on shrimp. Combine all ingredients except pineapple and bell pepper in mixture and marinate for 30 minutes in the refrigerator. Grill time varies. Grill until shrimp is pink and scallops are opaque.
