Fresh cod fillets with a generous topping of fresh fruits of “Green Color” especially for St. Patrick’s Day.

            4 cod fillets
3 tablespoons Colavita Extra Virgin Olive Oil
            1 tablespoon unsalted butter
½ cup red onion, chopped
            1 teaspoon ground coriander
            ½ cup white wine
            2½ cups sliced fresh fruit (kiwi/green seedless grapes/pears)
            Sea salt, to taste
            Salt, if desired
            Freshly ground black pepper
            2 tablespoons fresh cilantro, chopped

Serves 4

In a medium skillet, sauté the fillets in the Colavita Extra Virgin Olive Oil and butter until cooked. Remove to a warm platter.

Add onion and coriander (and additional oil, if needed) sauté until soft. Add wine to skillet scraping the bottom of pan. Reduce to half. Add fruits, salt, pepper and cilantro; cook 5-7 minutes. Serve over cod fillets.
