4 U.S. farm raised catfish fillets (6 to 8 ounces each)
¼ cup Colavita Extra Virgin Olive Oil
2 cloves garlic, minced
½ cup orange juice
1 teaspoon ground ginger
Freshly ground black pepper
Salt, if desired
Option: Cilantro as garnish
Serves 4
In a large skillet, quickly brown catfish in the olive oil together with garlic, then add orange juice, ginger, and pepper. Lower heat and continue to cook until opaque.
Serve each fillet with a drizzle of sauce. Garnish.
