Vinagrette All'Aceto Balsamico 

Balsamic vinegar is aged in casks, which is how it achieves its time-honored sweet-mellow flavor. Not only does it perk up a salad, but it is also a creative addition to many sauces. 

Dress your greens in a large bowl rather than on individual salad plates. You'll use less dressing this way. 

            5 tablespoons Colavita Balsamic Vinegar
            1 tablespoon minced garlic
            2 teaspoons Dijon mustard 
            Salt to taste 
            Freshly ground black pepper to taste
            1 cup Colavita Extra Virgin Olive Oil 

Yields approximately 1 cups

In a small bowl, whisk together the Colavita Balsamic Vinegar, garlic, mustard, salt, and pepper. Add the Colavita Extra Virgin Olive Oil in a thin stream while whisking.
