¾ pound small shells
¼ cup Colavita Extra Virgin Olive Oil
¾ cup low-fat mayonnaise
½ pound baby shrimp, cooked
1 pound sea legs, cut into small pieces
1 teaspoon capers, drained
1 stalk celery, sliced
Juice of 1 lemon
¼ teaspoon ground turmeric
½ cup ground fresh cilantro
Freshly ground black pepper, to taste
Salt, to taste (optional)
Serves 4 to 6
Cook the pasta. Drain well and refrigerate until cool.
In a large bowl, combine the Colavita Extra Virgin Olive Oil and mayonnaise, and add the shrimp, sea legs, capers, celery, lemon juice, turmeric, cilantro, pepper and salt. Mix well and serve. |
