1 pound medium-wide noodles
3 tablespoons Colavita extra virgin olive oil
1 tablespoon unsalted butter
1 medium onion, peeled and chopped

small green pepper, seeded and chopped
1 large cooked potato, cold, diced
1 pound cooked lean corned beef, coarsely chopped
Freshly ground black pepper to taste
2 teaspoons Worcestershire sauce
2 dashes hot pepper sauce
˝
cup chopped parsley
Serves 4 to 6.
Cook the pasta.
In a large skillet, sauté the onion, green pepper, and potato in the Colavita extra virgin olive oil and butter. Add the corned beef, and when crisp, add the black pepper, Worcestershire sauce, hot sauce, and chopped parsley. Toss with the noodles and serve.
