PASTA WITH MARINARA SAUCE


You can double this recipe and freeze the leftovers for another time!


            1 Small Onion, chopped
            2 Cloves Garlic
           
¼ cup Colavita Extra Virgin Olive Oil
            1 35-oz. can Italian Plum Tomatoes with their juice
            1 tsp. Salt
            2 pinches Dried Basil
            1 pinch Dried Thyme
            Freshly Ground Black Pepper to Taste
            3 oz. Tomato Paste (optional)
            3 oz. Water (optional)
            1 lb. Pasta of your choice

In a large skillet, sauté the onion and garlic in the oil for about 5 minutes. Chop the tomatoes coarsely and add with their juices to the skillet. Add the salt, basil, thyme and pepper. Cook, covered, for 10 minutes; stir and cook, uncovered, for another 20 to 25 minutes.

If you like a thicker sauce, add the tomato paste and water with the tomatoes. While the sauce is simmering, begin cooking pasta. When ready, serve the sauce over the pasta.
