medium onion, chopped
tablespoons Colavita Extra Virgin Olive Oil
large red pepper, chopped
cups cooked turkey, skinned, boned and cut into bite-size pieces
cup dry white wine*
teaspoon fennel seeds
teaspoon ground cumin
tablespoon hot pepper sauce
ground black pepper to taste

Serves 4 to 6.
In a medium skillet, sauté the onion and garlic in Colavita extra virgin olive oil. Add
the red pepper, turkey, and wine. Stir in the fennel seeds, cumin,
hot pepper sauce, pepper and salt, and stir for 20 minutes until well
Cook the pasta.
In a large bowl, combine the pasta with the turkey mixture and toss.
Add the Swiss cheese and serve.
