QUICK AND LITE BLUEBERRY BETTY


            2 tablespoons Colavita Extra Virgin Olive Oil
            3 cups fresh or frozen blueberries
            6 tablespoons maple syrup

            1
½ tablespoons Colavita Extra Virgin Olive Oil
            5 slices whole grain bread, torn or processed into small crumbs
           
¼ cup sliced almonds
            1 teaspoon ground cinnamon

Serves 6

In a medium size skillet heat the Colavita Extra Virgin Olive Oil, add blueberries and maple syrup. Cook 3 to 6 minutes while stirring. Remove from heat and let sit.

Meanwhile, in a large skillet, add the Colavita Extra Virgin Olive Oil, breadcrumbs, almonds and cinnamon. Stir 3 to 4 minutes until gold brown. Let cool.

In individual bowls, add blueberry mixture and top with crumb mixture. Add ice cream or sherbert, if desired.
