CHICKEN SCARPARIELLO
SHOEMAKER STYLE

It's probably interesting how the "shoemaker recipe" came to be. It has been a Love Chef favorite forever. Please be sure the sausages are butcher quality.


            ¼ cup Colavita Extra Virgin Olive Oil
            2 tablespoons butter
            4 whole cloves garlic
            1 pound boneless chicken, cut into bite-sized pieces
            1 pound Italian sweet sausages, cut into bite-sized pieces
            
¼ teaspoon dried oregano or ¾ teaspoon chopped fresh oregano
            Pinch of crushed red pepper flakes
            Salt to taste
            Freshly ground black pepper
            ¾ cup dry white wine*
            2 tablespoons fresh Italian parsley, chopped

Serves 4

In a large skillet, heat the Colavita Extra Virgin Olive Oil and butter; add garlic. Sauté chicken and sausages, turning frequently until deep golden brown and cooked through. Add spices, salt, pepper, and wine, and reduce liquid slightly. Sprinkle with parsley before serving.

*Suggestion: Use the same wine to enjoy with dinner -- Your favorite Chardonnay.
