PINZIMONIO

Since the name of this appetizer means "to pinch" or "grasp" in Italian, it is the counterpart of the French crudites - assorted raw vegetables. I recommend that fennel, often called Italian celery, be used when in season.

This Italian version is terrific with a number of condiments, including those mentioned below.


            1 bunch scallions, trimmed
            3 large bulbs of fennel or celery, cut into bite size pieces
            3 carrots, cut into wide ribbons
            1 bunch small radishes, trimmed

Dipping Condiments:

            Colavita Extra Virgin Olive Oil
            Colavita Balsamic Vinegar
            Mixture of freshly ground black pepper and salt

Artistically arrange the vegetables on a large platter, with bowls of the three dipping condiments clustered around.
