1 medium onion, sliced
8 slices lightly toasted whole grain bread, crusts removed
3 Tablespoons Colavita Extra Virgin Olive Oil
3 medium tomatoes, peeled and sliced
10 ounces spinach, cooked and well drained
(frozen 10 ounce package works well)
¾ teaspoon dried oregano
½ teaspoon grated nutmeg
1 cup shredded low-fat mozzarella cheese
Sea salt, to taste
Freshly ground black pepper, to taste
Serves 6
Pre-heat oven to 350°F.
In a small skillet, sauté the onion in some of the Colavita Extra Virgin Olive Oil until translucent; then quickly sauté the spinach.
Brush the toast on both sides with Colavita Extra Virgin Olive Oil. Line the bottom and sides of a 9¼" x 5¼" loaf pan with toast, cutting to fit.
Layer in half of the tomato and the onion, add oregano and spinach. Sprinkle with the nutmeg and add the rest of the tomatoes. Top with the cheese, salt and pepper to taste. Bake for approximately 30-40 minutes.
