TOP-OF-STOVE CASSOULET


            1 pound boneless lamb, cut into 1-inch cubes
           
½ pound sweet Italian sausage, sliced bite-size
            1 onion, chopped
            3 tablespoons Colavita Extra Virgin Olive Oil
            1
½ cups tomato sauce
            2 cups cooked white beans (freshly cooked or canned and drained)
           
½ cup red wine*
            1 bay leaf
           
½ teaspoon savory
            Freshly ground pepper to taste
            Salt, if desired

Serves 4.

Saut
é the lamb, sausage, and onion in the Colavita Extra Virgin Olive Oil until the lamb is brown. Drain off the excess fat and add the remaining ingredients.

Cover and simmer about 1
½ hours, stirring occasionally.
